MANCHEGO RATATOUILLE WITH EGGS-PISTO MANCHEGO CON HUEVOS

Ingredients
6 eggs
4 large ripe tomatoes
2 large onions
2 fleshy green peppers
2 medium courgettes
1 red pepper
100 g of ham in taquitos (optional)
Virgin olive oil
1 teaspoon of sugar
Salt |
Preparation
Peel onions; remove the stalks and seeds to the peppers; a little scrape the skin of the courgettes without end peel them; and scald tomatoes to remove the skin. Then cut into cubes all these vegetables. Bring to a deep skillet or an earthenware dish. Cover the bottom with oil and sauté the ham, if you want to enrich the plate. Add onion and peppers and lightly FRY everything for 8 minutes while stirring with the spatula. Add the zucchini and when also cooked, incorporate tomatoes. Mix well and let do Ratatouille simmer 20 minutes more. Ten minutes before the end, take a little sugar to counteract the acidity of the tomato and salt to taste. |
